Poached Plums In Amaretto
- Ready in: 20 minutes to prepare and 20-25 minutes cooking time
- Serves: 6
- • 500g fresh plums, ready to eat but firm
- • 175g golden caster sugar
- • 200mls water
- • 1 cinnamon stick
- • 1 star anise
- • 100mls Amaretto
Carefully cut plums in half and remove stones. Set aside.
Add sugar to a heavy based pan along with water, cinnamon, star anise and amaretto.
Gently heat whilst stirring until all the sugar dissolves.
Bring to the boil gently and simmer for 8-10 mins.
Slide plums into pan along with syrup flesh side down and simmer for 10 mins.
Remove from heat and allow to cool.
Remove cinnamon stick and star anise.
