Poached Plums In Amaretto

Poached Plums In Amaretto


  • • 500g fresh plums, ready to eat but firm
  • • 175g golden caster sugar
  • • 200mls water
  • • 1 cinnamon stick
  • • 1 star anise
  • • 100mls Amaretto


  1. Carefully cut plums in half and remove stones. Set aside.

    Add sugar to a heavy based pan along with water, cinnamon, star anise and amaretto.

    Gently heat whilst stirring until all the sugar dissolves.

    Bring to the boil gently and simmer for 8-10 mins.

  2. Slide plums into pan along with syrup flesh side down and simmer for 10 mins.

  3. Remove from heat and allow to  cool.

    Remove cinnamon stick and star anise.
