Tasty Tea Loaf

'Chewin the fat' with a good friend who doesn't care whether you have tidied or not is one of life's pleasures. Treat them to a slice of this tempting fruit loaf with coffee. Gorgeous whilst still warm!




230g raisins or currants

•250mls tepid tea

•250g self-raising flour

•150g soft light brown sugar (caster will do the job if it is all you have)

•1 egg, beaten

butter for greasing loaf tin

•you will also need a 22cm x10cm loaf tin.




Add raisins/currants to large bowl.

Add tepid tea to raisins/currants, mix through and cover with a clean cloth.

Leave to soak for 4-6 hrs or better still overnight.

Preheat oven to 175C/Gas 3.

Then add flour, sugar and beaten egg to the soaked fruit and mix well.

Grease loaf tin and spoon mixture into the tin. (Loaf liners are great if you can get them, no need to grease and loaf will come out of tin perfectly every time.)

Place in oven on middle shelf for approx. one hour or until a skewer inserted into the middle of the loaf comes out clean.


Try with a little butter for a treat or with a piece of your favourite cheese.
