There is also a special guest recipe and foreword by James Mackenzie of the Michelin starred The Pipe and Glass Inn. ( I have seen him in action at The Malton Food Show and he is rather impressive) My daughter had a go at the delicious focaccia substituting 50% of the plain flour for wholemeal which worked a treat.
Inspired by the book and having been kindly gifted a bottle of Yorkshire Rapeseed Oil with Garlic, I thought I would get creative myself!
I read in The Sunday Times this week that Joanna Lumley makes red soup and green soup. So do I! She refers to green soup as being made with “anything green in the fridge’ and “red soup’s the same only red”. I can’t claim to have a huge repertoire as Joanna may have but am a great advocate of having homemade soup on the go almost all year.
I have made some Red Soup of my own and am happy to share the recipe. You will see that I have used the aforementioned Yorkshire Rapeseed Oil with Garlic, very handy as I did not have any fresh garlic normally used in this recipe but the results were every bit as good! This recipe will comfortably serve 6-8 and is perfect with a piece of homemade, warmed focaccia!
2 Tablespoons Yorkshire Rapeseed Oil with Garlic
2 Red Onions, chopped
2 Red Peppers, chopped
1 Orange Pepper, chopped
2 Large Potatoes, peeled and chopped
2 Tins Chopped Tomatoes
1 Tablespoon tomato puree
1/2 teaspoon Sugar
750mls hot vegetable stock
Grated Parmesan and Torn Basil to taste
Seasoning to taste
1 Add the rapeseed oil with garlic to a heavy based pan on medium heat. Add diced onion and cook for about 5 mins until it begins to soften. Add diced potatoes, diced Red Peppers and Orange Pepper and continue to cook for another 5 mins.
2 Add tinned tomatoes, tomato puree, sugar and mix thoroughly.
Add hot stock, mix and season.
3 Bring to the boil and simmer with lid on for approximately 20-25 mins or until all vegetables are cooked through.
4 Turn off heat and blend with hand blender until smooth.
Add grated parmesan to taste, mix through and check seasoning.
Enjoy with fresh torn basil when ready to serve!
