See My Latest Recipe, King Prawns with Spicy Lush Lemon Curd Marinade!
The family 'ate all of' my latest recipe, made on Friday night. Could not be easier or quicker! Mercer's of Yorkshire Lemon Curd added real depth of flavour. Try it out!
(FYI, The Mercer's, Paul and Lizzie live in Yorkshire with their four children. Paul is the creative foodie of the two, always trying new recipes and Lizzie dots the i's and crosses the t's to ensure their products reach the shelf in optimum condition.)
KING PRAWNS WITH SPICY LUSH LEMON MARINADE!
280g King Prawns (cooked and peeled)
2 tablespoons olive oil, 1 large fresh red chilli, finely chopped,
2cm piece fresh ginger, peeled and finely chopped, juice of half a lemon, 2 large teaspoons of Mercer’s Lush Lemon Curd,1 handful fresh coriander, chopped and salt and pepper to taste
Add the olive oil to a medium sized bowl and stir in all other ingredients well.
Add the king prawns and coat thoroughly in the marinade.
Cover and leave to stand for 10 mins.
Pan fry marinaded prawns on a medium heat for 2-3 mins until heated through and serve with Pad Thai Rice Noodles as a main or serve as canapes on little sticks with a glass of bubbly! Quite delicious!
Serves 4 as a main or 6-8 as a canapés
